Rich and sumptuous, this recipe for chocolate brownie cake is a great cheaper alternative to eating out.

It's cold, it's windy and it looks like it could rain at any moment. Unless you happen to be a carefree fresher, exams, essays and other academic commitments seem to be looming over everyone during this hectic first week of term.

Combined with the inclement weather, it's easy to turn to food when overwhelmed, chocolate being an instant pick-me-up during stressful times. Yet buying a slice of chocolate goodness proves exorbitant compared to what you could make for the same price.

Try baking this delicious and irresistible chocolate brownie cake instead - you'll have plenty of ingredients leftover and the quality of this homemade sugary delight, compared to anything store-bought, will leave you pleasantly surprised.

Ingredients needed:

  • 250g cooking chocolate
  • 200g butter
  • 200g caster sugar
  • 3 eggs
  • 65g flour

1. Melt the butter slowly in a saucepan over low heat. Then, add 200g of the cooking chocolate and leave the mixture to cool.

2. Whisk the eggs into the melted chocolate and pour the sugar, flour and remaining chocolate into the saucepan.

3. Pour the mixture into a cake tin and bake it in an oven heated at 180C/fan or Gas 4 for 35-45 minutes. For a fluffier consistency, leave the mixture to bake in the oven for longer.

4. Remove from the oven and leave to cool. This brownie cake will last up to 4 days, so eat up and enjoy!
