Just 4 days until Christmas..get in the mood with some festive nosh!
It began on Pancake day. I woke early, eagerly anticipating the sumptuous feast of doughy perfection that evening. But I was bored with the same plain circles made from eggs, milk and flour. So, I decided to ring my dear mum and ask for a radical take on this traditional snack. As with all fantastic cooks she did not disappoint me.
So here it is: pancakes made from... beer! Sounds weird? Maybe, but if you’re in the majority of students who stock more alcohol anything else, then this is the recipe for you.

Mix the yolks of 2 eggs in with a spoon of soured cream, sugar and a bit of salt. Pour a glass of beer in and whisk everything well. Add flour gradually whilst whisking slowly (try to avoid lumps – I know it can be hard).
Next, add small quantities of the remaining beer (still whisking). Then whip up 2 egg whites and add them to the batter, and whisk everything one more time.
Now put a small amount of butter or oil into the pan and get it really hot. I find that one small spoon of oil is usually enough. Then pour the batter with a spoon to the pan (try to make the pancakes as thin as possible). It should take only a minute or two to cook. Do not flip it - just simply slide it out to the plate. On the side which was fried add your choice of filling. It could be sweet jam, sausage, cheese or even eggs! Be creative! Roll the pancake back up and place it in the pan once more then heat for two minutes. Serve up and tuck in!

Believe me, these pancakes are really easy to make and will definitely give your taste buds a treat! The best thing is that they are really cheap. However, perhaps not the healthiest in the world! Ah well, are students supposed to be…?
