New Year is time to spoil yourself, so here’s a selection of appropriately indulgent champagne cocktails.

A true classic; the Champagne Cocktail

  • 75ml Cognac
  • 1 sugar cube
  • 4 drops of Angostura Bitters
  • Champagne

Put the Cognac, sugar and bitters in a champagne flute, top up with champagne and enjoy.

A sweet, fruity one; the Bellini

  • ¼ of a skinned peach
  • 25ml Creme de Peche
  • A dash of peach bitters
  • Champagne

Blend the peach ¼ to make a purée, put this in the bottom of a champagne flute. Add the Creme de Peche and bitters, top up with champagne and enjoy.

Another classic; the Champagne Charlie

  • 25ml Apricot Brandy
  • Champagne

Put the brandy in a champagne flute, top up with champagne and enjoy.

Here is a refreshing twist on a true classic; the Ginger Champagne Cocktail

  • 25ml Vodka
  • 3 strips of pickled ginger
  • Champagne

Place the ginger strips into a cocktail shaker and press to release the juices. Add the vodka and ice, shake well and strain into a champagne flute, top up with champagne and look sophisticated.

Supposedly named after a French priest; the Kir Royale

  • 25 ml Creme de Cassis
  • Champagne

Fill a champagne flute with the champagne then slowly add the Creme de Cassis to create a beautiful light pink and enjoy.
